This research has identified various extracellular polysaccharides derived from Kefir as potential prebiotic sources, and interest in characterizing them and bring about the novelty of the strains. In the paper, extracellular polysaccharides extraction, characterization as well as prebiotic efficacies assay with results were reported. Of which, 3 strains show promising prebiotics efficacies.
