Abstract: Prebiotics has been of a growing interest in recent years due to the various benefits being researched on, sparking interest in the search for novel prebiotics materials. This research has identified various extracellular polysaccharides derived from Kefir as potential prebiotic sources, and interest in characterizing them and bring about the novelty of the strains. In the paper, extracellular polysaccharides extraction, characterization as well as prebiotic efficacies assay with results were reported. Of which, 3 strains show promising prebiotics efficacies. This paper concludes with future work section detailing the various test that can be conducted to further study the efficacies of these strains.
